Evaporators are key equipment for concentrating juice by removing water through heating and vacuum technology. The process typically involves:
Preheating: Juice is heated to 60-80°C via plate heat exchangers. Evaporation: Water evaporates at low temperatures (50-70°C) under vacuum (0.85-0.95 bar). Condensation & Recovery: Vapor is condensed for heat recovery, with some systems featuring essence recovery units to preserve volatile aromas.
